The Big Business of Holiday Pastry in France

Every year, the holiday season in France officially kicks off in September. That is, if you are in the business of creating or writing about the confections that consumers intend to order for their holiday tables.

After nearly six months of recipe developing and experimenting, pastry chefs and chocolate houses bring in photographers and journalists from the country’s top newspapers and magazines, along with a select group of “influencers,” for exclusive previews of their collection de fêtes. Much like the frenetic pace of showroom visits during fashion week, pastry previews are a serious affair. Journalists are hurried, squeezing in appointments to get a look at everything from the intricate creations of five-star-hotel pastry chefs to the more accessible offerings at beloved neighborhood bakeries.

Invitées fire off their questions in rapid succession: Your inspiration? The complexity of the recipe? How many will be available? Then they’ll bite into samples of modern bûches (yule log cakes delivery online), spiced cakes online, galettes des rois (kings’ order cakes online ), and maybe a ganache or two before jetting off to their next visit—all before they’ve even had a chance to clear their plates.

By the end of the second week of back-to-back tastings, those journalists tasked with documenting and ranking the year’s most artful, creative, flavorful, and crowd-pleasing confections have reached saturation. “I just take a couple of bites, that’s all I can manage at this point. I have another tasting to get to!” says an assistant editor, who preferred to remain anonymous, as we dug our forks into Julien Alvarez’s key ring–shaped entremet (a small cake usually served between courses), created for Le Bristol hotel. By the time I finished my slice and looked up to discuss the intensity and complexity of the flavors—roasted and ground cacao beans with a blend of toasted vanilla and caramelized white chocolate—the editor had already slipped out of the room, leaving her plate behind.

Her findings, along with those by her fellow reviewers, grace the pages of France’s leading food magazines, from Fou de Pâtisserie to Saveurs, by early November. Special-edition issues lay out the essentials: the year’s best bûches, the chocolate- and candy-filled advent calendars worth splurging for, and the most giftable confections, from seasonal macarons to cookies.

Scrap art steals flower show thunder

The steel city’s annual date with flowers is not just about blooms and bonsais.

Art creations crafted out of scrap metal attracted eyeballs on the opening day of the 31st Annual Flower Show organised by the Horticultural Society at Gopal Maidan in Bistupur on Sunday.

At the four-day show inaugurated by Indranil Chattoraj, director of National Metallurgical Laboratory in Burmamines, the scrap art and furniture stall set up by sculptor Suvendu Biswas was a hit.

Garden chairs, swings, animals and birds made of scrap metals are being showcased for the first time at the flower show to promote artwork made from recyclable waste.

Artistic items from truck silencers and dining table sets made of bearings generated a lot of interest among visitors.

Biswas’s stall also features wood art in the form of coffee tables and flower pots online.

“This is the first time that we have put up a kiosk that exhibits items that are entirely made of scrap materials. We have received a lot of queries and sold a couple of pieces,” said Biswas, who is the person behind the installations that currently beautify the roundabouts in the city .

Biswas has not painted most of his scrap metal showpieces to keep the rustic feel intact. He said every art piece had been chemically treated to increase their durability.

“We mainly use bearings, chain, silencer pipes, iron angles and flywheel. Sometimes the showpieces become bulky, but there is nothing we can do about it,” Biswas added.

The price the art items ranges from Rs 1,000 to Rs 55,000.

Wood-fired ovens: The secret behind Omana Paul's plum cakes

Around three tonnes of coconut shells fire the borma (wood-fired oven) in Kottayam, which bakes plum cakes that go under the label ‘Omana Paul’s’. When Omana Paul, the woman who set up the business, passed away seven years ago her former employees Shirley Jacob and husband Jacob (Biji) George took over the running of the business. This year, for Christmas, they are set to make around 3,500 plus plum cakes, a thousand fewer than last year.

Omana Paul began baking cakes, including plum cakes, commercially, in 1984, in Kottayam. Her youngest sister Laila Joseph recalls her late sister’s love for cooking, “She had a God-given talent for cooking. She used to help our mother in the kitchen, even when she was still in school and college, and was part of anything food-related happening there.” Omana, married to a Naval officer, loved entertaining, her sister remembers. Like any good host, she ensured that she put the best on the table.
